Today, I was human.

It's fair season, we all know what happens during fair season. We eat. A lot. And I myself fell victim to the smells of the yummy, tasty, but fattening, greasy foods at the Waseca County Free Fair of 2016! There are two fairs I attend each year, and the first of the two ended today. Now I can get back to my clean eating & rid my body of the toxic grossness I plagued myself with the past 24 hours.




Cheese curds-my absolute weakness. A MUST for me to have each year. The ooey gooey goodness of these perfectly golden deep fried artery cloggers is something I can't pass by. I'm human.



My dear friend Connie has her own soft pretzel truck at the local fair. Soft isn't even the word for it. The dough is perfectly seasoned, and definitely perfectly fried. So, so delicious. Again, I'm human.


I once found a caramel pecan funnel cake, and when I say once, I mean I have yet to find another stand that offers it. Personally, I feel it's a blessing in disguise because I think I would attend that particular fair daily just to get my quota in for the year. Again, I'm human.





So now that I've had all of this crap, I attest to you-I. Am. Human. Were you human this weekend?

Meal prepping is crucial if you want to eat well. Don't put yourself in a position to wonder what you're going to eat all day-this is how we end up eating gas station or fast food!

Also, eating 5-6 times a day is OK-in fact, to keep your metabolism running right, it's preferred & highly recommended to eat every 2-3 hours!!

Tasty Summer classic with a twist!


Who doesn't love a fresh batch of homemade potato salad???? If you know someone who doesn't, make them this recipe, and then get their opinion! (and please let me know)

With the change in our family's eating habits, I'm always on the lookout for the healthiest version possible of anything I make. I've been making a family recipe of potato salad for more than 20 years, but lately I tried something kind of different, and it was amazing! Granted, there's always a healthier version of a seemingly healthy dish; I once used plain Greek yogurt in place of the Light Miracle Whip-not so great. I've also tried Lite Mayo, another failed taste test. It all 'boils' down to personal preference, and below is my rendition of a healthy potato cauliflower salad. Enjoy :)

Cauliflower Salad

1 head of cauliflower, cut into bite-sized pieces
8-10 grass-fed farm fresh eggs
1 small white onion
1 ½-2 cups Lite Miracle Whip 
¼ cup 1% milk
1 tbsp mustard
¾ cup Stevia (or less, add more later)

Boil eggs for 15 minutes. Steam cauliflower until soft, but not mushy. Allow eggs & cauliflower to cool. Peel & chop eggs, dice onion, then put eggs, cauliflower, and onion in a large bowl. In a small bowl, mix well together Lite Miracle Whip, milk, mustard, and Stevia. Add more milk or Stevia, depending on your preference of sweet or tangy. Gently blend sauce mixture into cauliflower, onions, and eggs.
Serve immediately. Refrigerate leftovers.

Elimination Diet

Something I haven't spoke much about on this page is my studies to become a certified health coach through the Institute for Integrative Nutrition. As I'm beginning Module 13 this morning, the topic of my first lecture is the "Elimination Diet" by Tom Malterre about the common dietary irritants of our every day living.

Celiac disease, gall bladder attacks, irritable bowel syndrome, fatigue, gluten, wheat & dairy sensitivities, etc., all are linked to our diets, to our digestive systems, and what we're putting into our bodies.
